Hairy Gourd Soup with Pork Balls and Glass Noodles
The hairy gourd I buy from redmart sometimes comes in a set of 2. After cooking this stir-fried dish, there's often a huge chunk left over! I chanced upon this souper simple recipe from Souper Diaries and was happy to see that no complex ingredients were necessary, with cooking time only 30+ min. Always happy to have my kids get their dose of nutrient-rich greens in as many ways possible :) Ingredients
5g oil
3 cloves of garlic
25g of dried silverfish
25g of dried scallops
1 hairy gourd, peeled and cut into chunks
35g glass noodles
Pork Balls
150g minced pork marinated with 1 tsp light soy sauce, 1tsp of sesame oil, 1tsp corn flour and 2 pinches of salt
1. Soak scallops in 100ml warm water for at least 20min
2. Soak glass noodles for at least 20min
3. Roll minced pork into small meatballs
4. Chop garlic (5s/Speed 5)
5. Add in silverfish and oil and stir-fry till fragrant (3min/Varoma/Reverse Spoon)
6. Add in scallops together with the water it was soaked with. Add 900ml water and hairy gourd.
7. Bring soup to a boil (10-15min/Varoma/Reverse Spoon)
8. Reduce to a simmer (30min/95degrees/Reverse Spoon)
9. In last 5 min of step 7, add in Pork Balls one by one through MC hole. In last 2 min, add in glass noodles.
